Giniling Turo-Turo Style

Back home this dish Giniling Turo-Turo Style is fairly popular especially at street side eateries, commonly called Turo-Turo Restaurants. I have my own simple version of Giniling Guisado which is actually my Mom’s old recipe that she cooked for us when I was a kid.

Giniling Turo-Turo Style

I have to admit she does not cook it often, but when she did it was a hit every time. This version of giniling is kind of colorful as well as a little bit fancy for the reason being I used more ingredients in this one than the other one I posted a while back. Like I said this is the Turo-Turo version so it will probably remind you of those mouth-watering days you had in the Philippines. So let’s do it.

Ingredients:

  • 1 Lb. Ground beef (lean)
  • 1 Cup of diced potatoes
  • ½ Cup diced carrots
  • ½ Cup Frozen green peas
  • ½ Red bell pepper diced
  • ½ Yellow bell pepper diced
  • 1 Small onion diced
  • 1 Small tomato diced
  • 4 Cloves of garlic peeled and smashed
  • ½ Tsp. Ground black pepper
  • ½ Tsp. MSG (vetsin), optional
  • 2 Tbs. Annatto seeds (atsuwete)
  • 2 Tbs. Soy sauce
  • 1 Tbs. Fish sauce (Rufina brand) Patis
  • Corn oil

Directions:

  1. Prepare the Annatto seeds in a small pot by heating 2 Tbs. of corn oil and then adding 2 Tbs. of Annatto seeds until the oil turns dark red.
  2. Then remove it from the heat. Make sure that you do not burn the seed.
  3. In a large pan brown ground beef and drain.
  4. Add garlic and let it sauté for about 3 minutes.
  5. Then add the onions, tomatoes, black pepper, msg, (vetsin) and fish sauce (patis) and let it cook for 2 minutes on medium high heat.
  6. Add the potatoes, carrots, green peas, and soy sauce. Stir and cover.
  7. Let it simmer for 1 minute.
  8. Using a strainer add the colored corn oil from the annatto seeds into the pot and mix well.
  9. Replace cover and let it cook for 5 minutes over medium low heat.
  10. Then add the bell peppers.
  11. Stir well and adjust the taste by adding salt and pepper if needed. Cover and let it cook for another 2 minutes.
  12. Serve with rice topped with Turo-Turo style Giniling. Enjoy!

    This looks good.. Giniling or Tinadtad in carinderas in the Philippines, at least in Lucena City in Quezon Province, uses ground pork.. I used to cook it with ground beef and it was awesome but since my wife is not into beef, we substituted it with pork like what we have in PI before.. My mother-in-law cooks it like menudo but instead of using atswete, she just uses tomato catsup and tomatoes are optional…

    Where I come from they call this “Torta” my Mom’s old recipe includes ground or chopped fresh shrimp and a splash of lemon or calamansi. It is very delicious! She scramble one egg in a bowl then add about a cup of the cooked torta then fry it like an omellet or pancake. It is very good with banana ketchup. My Mom is from Pampanga in the Philippines. My husband loves it too!

    What I meant by browning is pre-cooking your ground beef. So, add a little oil then pre-cook your ground beef then follow the rest of the recipe. Good luck on your cooking!
