I live in the same area as you and frequent Jay International and Manila Foodmart as well. I know you have a lot of recipes with pork chops and you lament not having enough fat on them, living in the Midwest for a while hopefully you have the luxury to have tasted one of the GREATEST secrets in the area…Porksteaks! They are at almost every regular grocery store (the Asian markets dont have them for some reason) and are relatively inexpensive but the cut of the pork has a lot more fat in it and is way more tender than a regular pork chop. BBQ’d they are simply the best meat around, but they work well in many Filipino dishes. My wife is a Filipina and she uses pork steak in place of regular pork chops, and in many dishes she cooks. Just thought I would give you a heads up about them if you hadnt already came across them. Thanks for a great website and tasty recipes!
